
Avocado Chicken
Salad Sandwich
“This sandwich is one of my faves.” Rotisserie chicken, avocado, hot sauce, and celery seed mixed into the creamiest chicken salad — piled onto thick white bread with crispy fried onions and jalapeño ranch on top.

Sophia's Notes
- The jalapeño ranch from the last video is not optional here. It's what makes this a sandwich and not just a chicken salad. Make a batch first if you don't have it.
- Thick white bread, crusts off. This is not negotiable. The crust-to-filling ratio matters and you want more filling.
- Don't over-mash the avocado. You want chunks — it should add creaminess and texture, not turn the whole thing green and smooth.
- The crispy fried onions (French's are great) add the crunch that makes this feel complete. Don't skip them or substitute regular onions.
- Celery seed is doing a lot of quiet work here. It gives you the celery flavor without the texture — great for people who pick celery out of things.
- Rotisserie chicken is the move. Don't cook your own unless you already have leftovers — it's not worth the extra time for this one.
Ingredients
- 1 rotisserie chicken, shredded
- 2 avocados
- 3–4 tbsp mayo
- hot sauce, to taste
- ½ tsp celery seed
- salt and pepper, to taste
- 1 cup crispy fried onions (like French's)
- 8 slices thick-cut white bread, crusts removed
- jalapeño ranch sauce, for topping

Shred the chicken
Pull the meat off the rotisserie chicken and shred or chop it into bite-sized pieces. Add it to a large bowl. Dark meat, white meat, all of it.

Add the avocado
Scoop in both avocados and fold them through the chicken. Mash lightly as you go — you want some creaminess but keep chunks. This isn’t guacamole.

Season and mix
Add the mayo, a good hit of hot sauce, celery seed, salt, and pepper. Mix everything together well. Taste it. Adjust the hot sauce, add a little more mayo if you want it creamier. Get it exactly where you want it.

Build the sandwich
Cut the crusts off your thick white bread slices. Scoop a generous amount of chicken salad onto one slice — don’t be shy.

Fried onions and jalapeño ranch
Add a good handful of crispy fried onions on top of the chicken salad. Drizzle jalapeño ranch sauce over everything. Top with the second slice of bread.

Happiness
That’s it. Cut it in half if you’d like. Eat immediately — the fried onions are best right away before they soften.
