Smashed Taco Burgers

“Smashed like tortilla taco burgers kind of situation.” Ground beef pressed thin right onto a flour tortilla, pan-fried meat-side down, loaded with toppings, and folded like a taco. Sophia made this with her little teaspoon and the whole family went crazy for it.

Sophia's Notes

  • Steak seasoning is the move for burgers because it already has garlic, pepper, and everything you need in one shake. No measuring a bunch of individual spices.
  • Get your hands in there and really work the seasoning into the beef. Then divide it into four equal parts before spreading.
  • Spread the meat thin, all the way to the edges. You want it covering the whole tortilla so every bite has both. If it's too thick it won't cook evenly.
  • Cook meat side down first. That's where the browning happens. Once it's cooked through, flip to crisp the tortilla underneath.
  • Cover the pan after flipping to get the tortilla toasty on the bottom and melt the cheese at the same time. Two things at once.
  • Load it up with whatever you love on a burger, then fold it in half like a taco. That's the whole bit and it rules.

  • 1 lb ground beef
  • steak seasoning, to taste (has the garlic and pepper built in — that's the whole point)
  • small flour tortillas
  • olive oil, for the pan
  • 4 slices cheese (optional but highly recommended)
  • lettuce, sliced onion, ketchup, and whatever toppings you love

Instructions

    Season the beef

    Add your ground beef to a bowl and season generously with steak seasoning. Get your hands in there and mix it well — steak seasoning has garlic, pepper, and everything already in it so you don't need anything else.

    Divide and smash

    Split the beef into 4 equal portions. Take each one and press it directly onto a flour tortilla, spreading it thin all the way to the edges. You want full coverage — that's the whole move.

    Heat the pan

    Add a small drizzle of olive oil to a skillet over medium-high heat. Let it get hot.

    Cook meat side down

    Place the tortilla into the pan meat-side down. Let it cook undisturbed until the beef is browned and cooked through. Don't rush it.

    Flip and cheese

    Flip to the tortilla side. If you're doing cheese — and you should — lay a slice on top now. Cover the pan with a lid to melt the cheese and get the bottom of the tortilla toasty at the same time.

    Load it up and fold

    Top with lettuce, sliced onion, ketchup, and whatever else you love on a burger. Then fold it in half like a taco. That's it. Taco burger dinner is done.
