Dumplings in Coconut Curry
Coconut milk, soyaki, red curry sauce, spinach, and a bag of frozen pot stickers — all in one baking dish at 350 for 30 minutes. Sophia made it and said: “I totally understand why this went viral.”

Sophia's Notes
- Soyaki is the Trader Joe's teriyaki-style sauce. If you can't find it, use a teriyaki sauce with a splash of soy sauce.
- Any frozen dumplings or pot stickers work here — chicken, pork, veggie, whatever you have. No need to thaw them first.
- After the dumplings are done, Sophia's move is to add sushi rice directly into the dish and mix it all together. Do this.
- Her son was still devouring it while she was filming. That's the review.
Ingredients
- 1 can coconut milk (13.5 oz)
- 3 tbsp Soyaki sauce
- red curry sauce
- fresh spinach
- frozen pot stickers or dumplings (~20 pieces)
- fresh cilantro, for serving
- green onions, sliced, for serving
- sushi rice, for serving

Mix the sauce
In a large baking dish, combine the coconut milk, soyaki, and red curry sauce. Stir until combined.

Add spinach and pot stickers
Add the spinach into the sauce and stir it in. Nestle the frozen pot stickers on top in a single layer.

Bake
Bake at 350°F for 30 minutes, until the dumplings are cooked through and the sauce is bubbling and fragrant.

Top and serve
Top with fresh cilantro and sliced green onions. Serve as-is, or — Sophia’s recommendation — add sushi rice directly into the baking dish and mix it all together.
